Also adore the mushroom salad u made! Have u tried marinate fresh shikate mushrooms with ginger, soy, sesame oil and a bit of mirin? I paired it with blanched bokchoy and some toasted sesame seeds on top. Awesome salad, my fav! (And I am not a salad fan at all).
