Solstice cake, unwrapped

Solstice Cake.

Unwrapped a day or two early. (Greedy. Always.)

The marzipan dissolves into the texture of the cake, making for a perfect combination of fudge and crumb. Surprisingly, not at all dry. Not one bit.

Sliced thinly and enjoyed with a steaming cup of rooibos tea and Jo, who’s had, one could say, the Week from Hell.

There will be another for the Solstice itself. Am converted, completely, to the wintry joys of a Fruited Cake.

Just no lurid glacé cherries or horrid mixed peel…

hmmm....that sounds and looks so good. I am actually partial to glazed cherries and mixed peel... "arrgh" you might be thinking, I know, but somehow I like it.

I might consider joining this event. Thanks for teh heads up.

Speaking of winter, I'm having some friends over for lunch today and pretending it's summer because we will be having fajitas and sangria. :-)

Nora, you probably need to feel a bit of sunshine-y, summeriness given ALL the rain you've had...

It is so nice to see a pic of a real cake. Not the glossy cake shop type.

...and I'm with you on glace fruit, especially the green ones that tasted of wax (am sure they contained no actual fruit) that probably were the reason I never ate christmas cake as a child!

Ricki - I think you'd really like this (and would be clever enough to be able to sub in something like agave syrup for the 100g of sugar). Not too sweet, not too virtuous...

AOF - it IS nice to see a real, chunky cake. Tastes good, too! Much 'blonder' than I thought it would be. You do have to wonder how a cherry, deep mahogany in colour can be glaced into something waxy and green...can't wait to see yours.

Ohhhhh....this looks amazing. Thank you for a breath of winter's chill. Where I live, it is 15 minutes before midnight and still 89 degrees outside. But your Solstice cake looks delicious nonetheless! Enjoy!

that looks lovely. I have come to appreciate peel but still am wary of glace cherries. But your cake looks moist and inspiring - am hoping to get my fruit together for soaking for my cake but am fearing I might need to brave the cold to buy a few bits and pieces - if I do I will remember this cake and know it is worthwhile!

I am with nora b.-in some sick way I can do the peel and the cherries...die hard fruitcake lover that I am. I tell ya if there is leftovers, cube em and enrobe the nuggets in dark chocolate. Even better if they've been soaked in booze.
