Lunch


Feeling lazy.

Quick vegetable lunch, to use up the last of the goats cheese.

Avocado chunks for creaminess; citrus-laced coriander to cut through.

Surprisingly good.

For a long time I wasn't keen on goats' cheese. Not sure what changed but I now can't get enough of it!
Love the idea of pairing it with avocado.

I've been feeling lazy, too. I have a whole bunch of vegetables and I'm just staring at them. Are those shredded carrots and bits of scallion, too? I need easy, tasty, pretty salads like this to perk up my interest.

It was good Truffle. Fresh and light, even though it is, of course, bloody freezing here at the moment!

Johanna - it was your post of a couple of weeks ago lamenting the loss of good salads that prompted it.

I'm pleased you've come round Wendy! I love the stuff. Goat milk feta is even better.

It was exactly what I needed too Susan. I've been doing much the same, maybe because we have the boys for so much longer than I'm used to and can't get truly creative with them around. Feel like I've eaten the same meal over and over and over again!

Nora, they are quite good together - it was only a tiny amount of cheese, more a seasoning than an ingredient. I look forward to your post!
