Looks delicious! There should be more of this elegant non-cooking cooking in my home.
This reminds me of hijiki that's not been stewed and heavily sweetened w/ tamari. Any similarities? The light cluster of matchsticks are a tempting invitation for a pair of chopsticks.

Susan, it is like hijiki, just lighter as you say and not so salty. The arame ends up looking like strands of angel-hair pasta and the carrot and ginger brighten up a dulled palate.
